Galaxy Macau has launched its latest dining concept, Estuary by Vicky Cheng – a collaboration with the acclaimed chef representing his first French restaurant.
Opening on 29 May, the fine dining establishment sees Chef Vicky bring his mastery in bridging classic technique with his philosophy of nourishing French gastronomy and pristine ingredients.
Widely recognized for his precision, creativity and cross-cultural fluency, Chef Vicky’s recent accolades include being honored with the Black Pearl Restaurant Guide Master Chef Award 2026. He also saw his Hong Kong restaurant Wing ranked No. 2 on Asia’s 50 Best Restaurants 2026 and his flagship VEA retain its one Michelin star in the Michelin Guide Hong Kong & Macau.

“Estuary by Vicky Cheng is a vision that has been years in the making, working with intense focus together with Chef Vicky,” said Kevin Kelley, Chief Operating Officer, Macau of Galaxy Entertainment Group (GEG).
“This restaurant concept represents the pinnacle of Galaxy Macau’s global ambitions – an independent fine dining expression built on patience, purpose and a shared vision for enduring culinary excellence and impeccable guest service.”
Estuary by Vicky Cheng is described as a French restaurant that draws inspiration from the natural meeting point of river and sea. It offers a menu featuring ingredients sourced from global estuarine regions, the name “Estuary” reflecting the harmony and transformation of these converging worlds.
According to GEG, the creative process at Estuary by Vicky Cheng considers every detail, from artisanal tableware and cutlery to a commitment to applying techniques such as fermentation and sourcing seasonal ingredients including sweet and sour honey from Yuen Long’s stingless bees.
“Estuary by Vicky Cheng is a full-circle moment for me,” said Cheng. “I was trained in classic French cooking, which shaped my culinary foundations. Estuary brings these experiences together. It is a reflection of my roots, my evolution and a reverential understanding of flavour, culture and craft.”
GEG describes Estuary by Vicky Cheng as one of the most anticipated openings in the Greater Bay Area, further strengthening Galaxy Macau’s position as a preeminent destination for standout dining.
As the latest addition to the resort’s portfolio, the restaurant offers a fresh expression of modern French cuisine, shaped by Chef Vicky Cheng’s distinctive perspective and artistry.
“Estuary by Vicky Cheng embodies the best of what Galaxy Resort stands for today: our relentless dedication to refined, guest‑focused dining that looks forward, honoring Macau’s UNESCO culinary heritage as a Creative City of Gastronomy, while shaping what personalised fine dining in Asia can truly become,” said Kelley.
Endless experiences
The launch of Estuary by Vicky Cheng follows the Grand Opening of Capella at Galaxy Macau in February – itself bringing a new level of luxury to Macau and for Galaxy Macau’s most esteemed guests.

Situated within the award-winning Galaxy Macau integrated resort, Capella at Galaxy Macau is an ultra-residential retreat comprising just 95 penthouses and suites designed to provide a sense of supreme luxury, intimacy and seclusion.
Part of the hotel’s unique offering is its Guest Programme – a tailored array of rituals and experiences covering art, gastronomy and wellness infused with cultural elements.
Program highlights include “A Sip of Heritage”, a tasting journey into the Chinese liquor Baijiu brought by the Capella Culturists – who comes to life when acting in the role as chief storytellers and hotel historians; a Chinese Tea Ceremony; a Masterclass with the chef of Botanica, in the restaurant’s open kitchen; a whisky cocktail masterclass at Pony & Plume Whisky Bar & Divan; a tour of Capella’s curated artworks and installations and much more.
